Vegan Chocolate Chip Cookies Recipe (under 30 mins!)

Updated: Aug 29, 2020

This was a recipe I adapted from this blog and made in 2016.

Yes, it’s an old recipe but it was really yummy and surprisingly easy!

I’m posting this here to

(a) give me the motivation to bake again and

(b) inspire you to try this out.

Knowing me, I only do simple stuff and this is probably one of the easiest baking processes with commonly available ingredients.

15 mins prep 10 mins bake Yields ~40 yummy cookies

large mixing bowl medium bowl whisk teaspoon (tsp) tablespoon (tbsp) baking paper baking pan

4 cups all-purpose flour 2 tsp baking soda 2 tsp baking powder 1 tsp salt

1 cup coconut oil 2 cups brown sugar 1/2 cup plant milk 2 tbsp vanilla extract

1 cup chocolate chips 1/2 cup cocoa powder

If you’d like to know what’s the difference between baking soda and baking powder, read this. But basically:

baking soda = pure sodium bicarbonate baking powder = sodium bicarbonate + acidifying agent + drying agent

  1. Pre-heat oven to 170 degrees Celsius.

  2. Combine GROUP 1 ingredients in a large bowl.

  3. In a medium bowl, mix GROUP 2 with a whisk.

  4. Add GROUP 2 into the large bowl with GROUP 1 and whisk together. The dough will be crumbly which is perfectly okay!

  5. Add chocolate chips to the dough and continue mixing. You might have to use your hands at this point if you’re not using the whisk machine.

  6. Add cocoa powder. I didn’t add in earlier because I wanted the cookies to have a marble pattern.

  7. Roll the dough into a tbsp sized balls and place them on an ungreased baking paper on a pan (I think without baking paper is fine too). Flatten the dough with your palm. Again, the dough may be crumbly but smoosh it together and it will be fine!

  8. Bake for 10 minutes (and only 10 mins max or else it will burn!).

  9. Let the cookies cool and they will harden up a bit.

The cookies were soft like Subway cookies. Nicely sweet and with a tinge of saltiness. I was not quite satisfied with the chocolate chips — they didn’t melt at all! So I’d have to try a different kind.

I brought the cookies to my cousin’s birthday celebration and they were praised by many! Another cousin liked them so much that he couldn’t quite believe they were vegan. Or maybe he was just teasing me… :p

Overall, this is definitely worth 30 minutes of your life and especially great for beginners.

So, what are you waiting for? Fill up your pantry and get baking!

Good luck and enjoy x
